Objectives

At the end of the lesson, pupils should be able to:

  1. Identify different foodstuffs and describe the various ways they can be used in food preparation.
  2. Explain the steps and procedures involved in preparing a specific local dish.
  3. Demonstrate the correct method for preparing a local food item, following all necessary steps and safety precautions.

Entry Behaviour

Pupils should already know what foodstuff is and have some experience with basic food preparation.


Instructional Materials

  • Textbook: Spectrum Home Economics for Primary School Book 3 (Sewa Sobowale, S. Umar, C. Ogbonna, 2017)
  • Visual Aids: Pictures or videos of various local dishes and their preparation methods
  • Foodstuff: Samples of ingredients for a specific local dish (e.g., yam, tomatoes, onions, beans)

Ways of Using Foodstuff in Preparation, Steps and Procedures for Preparing a Particular Food

  1. Ways of Using Foodstuff in Preparation:
    • Boiling: Common for vegetables, tubers (e.g., yam, potatoes), and grains (e.g., rice, beans).
    • Frying: Used for preparing meats, fish, and some vegetables (e.g., plantain, eggs).
    • Roasting: Used for foods like maize, yam, and nuts.
    • Baking: Common for bread, cakes, and pastries.
    • Steaming: Used for foods such as vegetables and puddings.
    • Grilling: A method for cooking meats and fish, often used to enhance flavor.
  2. Steps and Procedures for Preparing a Particular Food:
    Example: Preparing Yam Porridge (Local dish)
    • Ingredients: Yam, oil, onions, tomatoes, seasoning cubes, salt, water.
    • Steps:
      1. Peel and cut the yam into cubes.
      2. Boil the yam cubes until soft.
      3. In a separate pan, heat the oil and fry chopped onions and tomatoes until soft.
      4. Add seasoning cubes, salt, and a little water, then mix well.
      5. Add the boiled yam to the mixture and stir until the yam is well coated with the sauce.
      6. Allow to cook for a few minutes until the flavor blends well, then serve.

Lesson Presentation (Step-by-Step Procedure)

Step 1: Introduction
Start by discussing the importance of food preparation. Ask questions such as, “How do you prepare your meals at home? Can you tell me the steps involved?” Engage pupils with examples of local dishes they know.

Step 2: Explanation
Define and explain the different methods of food preparation (boiling, frying, steaming, etc.). Use visual aids or real food samples to demonstrate each method.

Step 3: Demonstration
Demonstrate how to prepare a particular local dish (e.g., yam porridge). Show each step clearly, ensuring to emphasize safety and hygiene practices, such as washing hands before handling food, using clean utensils, and handling hot surfaces carefully.

Step 4: Guided Practice
Ask pupils to assist with each step of the food preparation process. For example, let them peel the yam, stir the onions and tomatoes, or help in adding the seasoning. Guide them through each action, ensuring they understand why each step is necessary.

Step 5: Independent Practice
Assign pupils to work in small groups to prepare a similar dish (e.g., preparing boiled yam and beans). Provide necessary ingredients and ensure they follow the correct steps. Walk around and provide support as needed.

Step 6: Feedback
Once the dishes are prepared, ask each group to describe the steps they followed. Provide feedback on their techniques and offer suggestions for improvement. Reinforce key points about food safety and proper cooking techniques.


Evaluation

Formative Assessment:

  • Observe pupils as they engage in food preparation, assessing their understanding of each method and step. Ask questions like, “Why do we need to peel the yam first?” or “What happens if we don’t add enough seasoning?”
  • Use a checklist to assess pupils’ ability to follow the procedure correctly.

Summative Assessment:

  • At the end of the lesson, ask pupils to write the steps involved in preparing the dish they worked on or another local dish. They should include the ingredients and the cooking methods used. Alternatively, ask them to demonstrate one step from the preparation process.

  • Food can be prepared in different ways, such as boiling, frying, and baking.
  • Each method enhances the flavor and texture of the food.
  • It’s important to follow the correct steps in food preparation to ensure the food is tasty and safe to eat.

Assignment

Ask pupils to choose a local dish they enjoy and write out the ingredients and steps involved in preparing it. Encourage them to ask a family member for help in completing the assignment and share the process in the next lesson.
